We found Ojio Cacao Nibs hidden deep in the mountains rainforests of the Huanuco and San Martin regions in Peru. Small plantations in these areas grow native Criollo (revered as the Queen of Cacao), Amazon foreign (Forastero) and Trinitario bean cultivars. When the colorful cacao pods are ready, they are harvested by hand and split in half, revealing the sweet pulp and bitter seeds within. These are carefully fermented and sun dried to maximize their deep, yet complex flavor. The developed beans are gently shelled and broken into small pieces, resulting in simple, pure and remarkably flavorful nibs.
